In the realm of culinary legends, let's explore the captivating tale of coxinha, Brazil's cherished national snack. Picture a day dedicated to these delectable wonders ( we do have it May 18th), a celebration of shredded chicken wrapped in a potato embrace with a crispy coat. Across Brazil, coxinha is sold in various sizes, flavors, and even sweet and vegan versions.
This delight has earned a spot in Brazilian culinary heritage, accompanying cheese bread, feijoada stew, and caipirinhas. But, brace yourself, the coxinha isn't truly Brazilian. The concept's origins lie elsewhere.
Mystical stories swirl around the coxinha's birth. A famous tale hails from Limeira, 19th century Brazil. Legends tell of a hidden child of nobility with a fondness for chicken thighs. When supply ran short, a creative cook fashioned a potato dough encasing shredded chicken – the coxinha. The young royal's love for this creation spread, even reaching the Empress.
Yet, this tale's authenticity remains uncertain. Records don't support it, and Princess Isabel's children resided with her. Besides, coxinha's roots extend beyond Brazil's borders.
According to French-Brazilian chef Laurent Suaudeau, coxinha's original recipe is French, as seen in Antonin Carême's works. Portuguese influence is also evident in similar recipes dating back to the 1700s.
But what about its essence? The coxinha's journey likely involved adaptations, including Italian influence, leading to its resemblance to arancini. This savory treat, while similar in appearance, boasts a different interior – rice with diverse fillings.
